Want a dinner shortcut? This one-pan enchilada skillet is my favorite when I'm craving Mexican flavors without all the work. Everything comes together in a single dish with tasty layers of spiced beef, fresh veggies, hearty beans, and corn tortillas all covered in rich sauce and gooey cheese. It's all the yummy taste of traditional enchiladas but so much simpler!

What Makes This So Great

Dinner's on the table in less than an hour but tastes like it took all day! The combination of beef and beans keeps everyone full while sneaking in nutritious veggies. Let family members customize their own toppings, making it perfect for those finicky eaters. And you can easily swap ingredients based on what you've got on hand.

Gather Your Supplies

  • Ground Beef: Grab some 90% lean or higher for best results.
  • Fresh Veggies: Green onions, zucchini, red peppers, and corn (frozen works fine).
  • The Sauce: Ready-made enchilada sauce cuts down prep time.
  • Black Beans: Makes everything more filling and nutritious.
  • Corn Tortillas: Slice them up so they soak in all the flavors.
  • Plenty of Cheese: The Mexican blend gives perfect meltiness.
  • Toppings: Avocado, sour cream, tomatoes, or any favorites!

Storing Your Creation

Any extras will keep nicely in your fridge for about 5 days. Want to plan ahead? You can freeze portions for up to 3 months! Just heat it back up in the oven to keep that cheese perfectly melty.

Personalize Your Dish

Need less sodium? Try unsalted beans and homemade sauce. Short on time? Chop your veggies the day before or sub in whatever you have—spinach and mushrooms work wonderfully! Looking for serving suggestions? Try adding fresh lime wedges, a side of guacamole, or a crisp green salad.
