Pan Beef Enchiladas (Print Version)

# Ingredients:

01 - 1 lb ground beef (90% lean).
02 - 1 red bell pepper, chopped small.
03 - 1 medium zucchini, cut into small cubes.
04 - 6 green onions, set some aside for topping.
05 - 1 teaspoon chili powder.
06 - 1 teaspoon cumin.
07 - 1/2 teaspoon garlic powder.
08 - 1/2 teaspoon oregano.
09 - 2 cups red enchilada sauce.
10 - 15 oz black beans, rinsed and drained.
11 - 1 cup corn kernels, frozen.
12 - 8 corn tortillas, sliced into triangles.
13 - 1 1/2 cups shredded Mexican-blend cheese.
14 - Cooking spray.
15 - 1/2 teaspoon olive oil.
16 - Toppings of your choice.

# Instructions:

01 - Get your oven hot at 425°F.
02 - Heat oil and cook beef with veggies until meat isn't pink anymore.
03 - Stir in your spices, enchilada sauce, beans, corn, and about 1/2 cup of the cheese.
04 - Mix in the tortilla pieces so they get covered in the sauce.
05 - Scatter the rest of your cheese on top.
06 - Pop in the oven for 10-15 minutes till it's bubbling hot.
07 - Add your favorite toppings and enjoy while it's warm.
