Sweet Banana Loaf (Print Version)

# Ingredients:

01 - 2-3 medium fully brown bananas, peeled (roughly 1 1/4 to 1 1/2 cups when squashed).
02 - 1/3 cup (76g) melted butter, either salted or unsalted.
03 - 1/2 teaspoon baking soda.
04 - 1 pinch salt.
05 - 3/4 cup (150g) sugar.
06 - 1 large egg, whisked.
07 - 1 teaspoon vanilla extract.
08 - 1 1/2 cups (205g) all-purpose flour.

# Instructions:

01 - Get your oven hot at 350°F (175°C). Grease an 8x4-inch loaf pan with butter so your bread won't stick.
02 - Grab a bowl and smash those bananas with a fork until they're totally mushy. Pour in your melted butter and mix everything together.
03 - Toss in the baking soda and a tiny bit of salt, then dump in the sugar, whisked egg, and vanilla. Lastly, fold in the flour just until it's mixed in.
04 - Dump your mixture into the buttered pan and even out the top. Pop it in your hot oven for about 55 to 65 minutes. It's done when you can stick a toothpick in the middle and it comes out clean.
05 - Take your bread out and let it sit in the pan for a bit. Then move it to a wire rack until it's totally cool before you cut it. You can keep it wrapped up at room temp for 4 days, or stick it in the fridge or freezer if you want it to last longer.

01 - You'll want bananas that are super soft and mushy with skins that show at least half brown spots for the best flavor.
02 - Got a sweet tooth? Bump up the sugar to 1 cup. Want it less sweet? Cut back to 1/2 cup instead.
03 - Using a bigger pan? Your cooking time might change, so keep an eye on it.
04 - When wrapped up tight, this bread stays good on your counter for many days.
