Set your oven to 375°F (190°C) and put parchment paper on your cookie sheets.

Grab a big bowl and beat the soft butter and sugar together till they're fluffy and light.

Throw in the egg and mix well, then pour in mint flavoring and green coloring if using. Stir until everything's the same color.

In another bowl, mix your flour, baking soda, baking powder, and salt together.

Slowly add your flour mix to the butter mix, about half a cup at a time, until you get smooth cookie dough.

Stir in all those chocolate chips so they're spread out nicely in the dough.

Roll the dough into 22-24 balls and put them on your cookie sheets. Keep them a couple inches apart since they'll spread.

Stick them in the hot oven for 8-10 minutes until the edges look set and slightly golden.

Leave cookies on the sheet for 5 minutes, then move them to a wire rack to finish cooling.
