Fresh Mint Chocolate Circles (Print Version)

# Ingredients:

01 - 7 ½ cups (855 g) sifted confectioner's sugar.
02 - ⅓ cup canned milk.
03 - ⅓ cup clear corn syrup.
04 - 3 tablespoons coconut oil, soft or liquified.
05 - ¼ teaspoon peppermint essential oil (food-grade) or 1 teaspoon peppermint flavoring.
06 - 1 ½ pounds (680 g) chopped dark or semi-sweet baking chocolate.
07 - Smashed peppermint candy pieces for topping, if wanted.

# Instructions:

01 - Using low speed, mix the confectioner's sugar, canned milk, clear corn syrup, coconut oil, and peppermint together in a big bowl until everything's blended well.
02 - Make the mixture into two flat circles, wrap them in plastic, and stick them in the fridge for 30 minutes to get firm.
03 - Spread lots of confectioner's sugar on your counter or some parchment. Take out one dough circle, put it down, and dust more sugar on top.
04 - Roll the dough until it's about 1/4-inch thick and use a 1 7/8-inch cutter or something close to that size to make rounds.
05 - Bunch up any leftover pieces and roll them out again. Do the same thing with the second circle of dough.
06 - Put the cut circles on baking sheets lined with parchment and freeze them until they're hard, about 30 minutes or leave them overnight if you want.
07 - Put the chocolate chunks in a microwave at half power and stir after each minute until it's smooth and mostly melted.
08 - Take each frozen circle with a fork and dunk it in the melted chocolate. Tap the fork on the bowl to get rid of extra chocolate. Wipe the fork bottom on the bowl edge and carefully slide the coated circle onto parchment paper.
09 - Sprinkle crushed peppermint candy on top if you'd like.
10 - Wait about an hour for the chocolate to completely harden at room temp. Once hard, keep the patties in your fridge until you're ready to eat them.

# Notes:

01 - You might need to tweak how much peppermint you add based on how strong you like it. Try the filling before you roll it out and add more if needed.
02 - Another idea is to mix a bit of peppermint into the chocolate coating too for even more minty taste.
