Combine honey, sesame seeds, soy sauce, oil, ginger, garlic, and vinegar in a mixing bowl.

Dry the fillets with paper towels. Spread a tablespoon of the sauce on top and leave in the fridge for 30 minutes to 2 hours.

Move the rack towards the top. Turn the broiler to low heat. Prep a baking sheet with parchment paper.

Cook under the broiler on low for about 12-14 minutes, basting with the sauce every so often. For color, switch to high for 4-5 minutes until golden.
