Chicken Parmesan Classic (Print Version)

# Ingredients:

01 - 1 small onion, diced.
02 - 6 minced garlic cloves.
03 - 3 tablespoons of olive oil.
04 - Two sprigs of fresh basil.
05 - Salt and black pepper to taste.
06 - 28 ounces of canned crushed tomatoes.
07 - 1 teaspoon garlic powder.
08 - 1 cup panko crumbs.
09 - 2 cups Parmesan cheese, split in half.
10 - 3/4 cup plain flour.
11 - 2 large eggs, whisked.
12 - Six chicken cutlets (about 1.5 pounds).
13 - 1 cup mozzarella cheese, shredded.
14 - 1 cup vegetable oil for frying.
15 - Fresh basil leaves for topping.

# Instructions:

01 - Cook the onion and garlic in the olive oil until they’re tender.
02 - Stir in tomatoes and basil, then gently simmer for half an hour to thicken.
03 - Combine 1 cup of Parmesan, garlic powder, and breadcrumbs in a shallow bowl.
04 - Put the flour in one bowl and the eggs in another bowl for dipping.
05 - Sprinkle the cutlets with pepper and salt, then dip in flour, eggs, and finish with breadcrumbs.
06 - Heat vegetable oil in a deep pot to 350°F.
07 - Quickly fry the chicken for about a minute per side until it’s golden.
08 - Spread marinara on top and sprinkle both cheeses over it.
09 - Place under the broiler and cook until the cheese bubbles and browns a little.
10 - Top the dish with fresh basil and serve it alongside some extra sauce.
