Set your oven to 375°F and line baking sheets with parchment paper.

Whip together soft butter, sugar, and a pinch of salt for about 3 minutes until fluffy.

Add in the egg and vanilla, then blend until smooth.

Stir in the sifted flour slowly in three parts, mixing gently as you go.

Scoop the dough into a piping bag with a large star tip.

Pipe cookies onto the sheets in swirls or your preferred shapes, about 2 inches wide.

Pop them into the oven for around 10 minutes, or until the edges are golden.

Let your cookies cool completely before moving on to decorating.

To make the ganache, heat the cream in bursts and mix it with the chocolate until smooth.

Dip your cooled cookies into the ganache, then toss on sprinkles before the ganache sets.
