Beef Cheese Stuffed Tortillas (Print Version)

# Ingredients:

01 - 1 1/2 pounds ground beef, preferably lean.
02 - 1 medium onion with yellow flesh, chopped.
03 - 2-3 cloves of garlic, finely chopped.
04 - 1 teaspoon powder made from dried chilies.
05 - 1 teaspoon ground cumin seeds.
06 - 1/2 teaspoon oregano, dried form.
07 - 15 ounces chopped tomatoes mixed with chili peppers.
08 - 15 ounces beans that have been mashed and cooked twice.
09 - 8 big soft tortillas made from wheat flour.
10 - 1 1/2 cups sharp cheese, grated at home.
11 - Oil from plants for deep cooking.
12 - Extra toppings if wanted (thick cream, mashed avocado, chopped tomato sauce).

# Instructions:

01 - Sauté beef with onion till no pink remains.
02 - Toss in spices and minced garlic, stir for a minute.
03 - Dump in tomatoes, then mix in the mashed beans.
04 - Spoon mixture onto tortillas and sprinkle with cheese.
05 - Roll them up and stick toothpicks in to hold shape.
06 - Deep fry at 350°F until they turn golden brown, about 2-3 minutes each side.
07 - Let oil drip off and serve with your favorite extras.

# Notes:

01 - Always grate the cheese yourself.
02 - Don't let the oil get too hot or cool.
03 - Make sure to wrap them snugly so nothing spills out.
04 - Cook them right before you plan to eat.
