Tiramisu Truffles (Print Version)

# Ingredients:

01 - 1/4 teaspoon vanilla extract.
02 - 8 oz mascarpone cheese.
03 - 1/2 cup unsweetened cocoa powder.
04 - 1 1/2 cups crushed ladyfinger cookies.
05 - 1/2 cup mini chocolate chips.
06 - 1 tablespoon instant espresso powder.
07 - 1/4 cup powdered sugar.

# Instructions:

01 - Blend mascarpone with sugar, crushed cookies, espresso powder, and vanilla until everything's mixed nice and smooth.
02 - Scoop out small amounts, roll into balls, and pop in the fridge for roughly 30 minutes.
03 - Heat up chocolate in bursts, giving it a stir between each to avoid burning.
04 - Dip the chilled balls into melted chocolate, or roll them around in some cocoa powder.
05 - Top off with a dusting of cocoa powder and chill for about 15 minutes so they set up.

# Notes:

01 - Refrigerate if it's too soft.
02 - Stays good for a week in the fridge.
03 - Vanilla cookies can work instead.
