Zesty Herb Rice (Print Version)

# Ingredients:

→ Rice Foundation

01 - 2 tablespoons good quality olive oil
02 - 1 1/2 cups long grain basmati rice
03 - 1 clove garlic, finely chopped
04 - 2 1/4 cups water
05 - 1 teaspoon salt

→ Flavor Boosters

06 - Peel from 1 lime, grated
07 - 3 tablespoons fresh lime juice
08 - 1 cup fresh cilantro, roughly chopped

# Instructions:

01 - Pour olive oil into a medium saucepan and heat on medium-high. Toss in rice and mix until coated. Keep stirring now and then until rice turns golden. Throw in chopped garlic and cook about a minute more.
02 - Pour in water, add salt and lime peel. Wait for a full boil, then pop the lid on and turn heat to low. Let it bubble gently for 15 minutes, then take it off the heat but keep the lid on for another 10 minutes.
03 - Use a fork to gently fluff up the rice, then dump it into a serving dish. Drizzle lime juice over top and mix in the cilantro. Serve while it's hot.
