In a medium bowl, toss the salt, baking powder, and flour together.

Use a mixer to beat the butter till creamy, about a couple of minutes, then mix in the sugar.

Add the vanilla, egg, and almond extract (if using) to the butter mixture. Blend everything thoroughly.

Layer the rolled dough with parchment paper and put it in the fridge for 1-2 hours.

Cut shapes from the chilled dough and space them about 3 inches apart on baking trays.

Move sheets out of the oven, waiting 5 minutes before transferring cookies to a rack to fully cool.
