Flank Steak Marinade (Print Version)

# Ingredients:

01 - 2 pounds flank steak.
02 - Kosher salt.
03 - Black pepper.
04 - 1/4 cup reduced-sodium soy sauce.
05 - 2 tablespoons lime juice.
06 - 2 tablespoons light brown sugar.
07 - 1/3 cup extra-virgin olive oil.

# Instructions:

01 - In a big bowl, stir together soy sauce, olive oil, brown sugar, and lime juice.
02 - Drop the steak into the bowl and make sure the marinade covers it all.
03 - Let it sit for at least half an hour or as long as 2 hours.
04 - Take the steak out and use paper towels to dry it off.
05 - Sprinkle a bit of salt and pepper over the steak.
06 - Grill on medium-high heat for about 5 minutes per side.
07 - Put under a hot broiler for roughly 5 minutes per side.
08 - Make sure it hits 130°F if you want it medium-rare.
09 - Leave it alone before cutting across the grain.

01 - Fits both grilling and broiling.
02 - Don't soak the meat too long.
03 - Use a thermometer to check doneness.
04 - Let the meat rest before slicing.
