Spiced Cream Cheese Treats (Print Version)

# Ingredients:

01 - 6 oz (170 g) cream cheese, straight from the fridge
02 - 3 tbsp (38 g) white sugar
03 - 1/2 tsp vanilla extract
04 - 6 tbsp (75 g) white sugar
05 - 1/2 tsp ginger powder
06 - 1/2 tsp cinnamon powder
07 - 1/8 tsp allspice powder
08 - 1/8 tsp nutmeg powder
09 - 1/8 tsp cloves powder
10 - 2 1/2 cups (313 g) all-purpose flour, gently measured
11 - 2 1/2 tsp ginger powder
12 - 2 1/2 tsp cinnamon powder
13 - 1/2 tsp nutmeg powder
14 - 1/4 tsp allspice powder
15 - 1/4 tsp cloves powder
16 - 1/2 tsp salt
17 - 1/2 tsp baking soda
18 - 3/4 cup (168 g) unsalted butter, room temperature
19 - 3/4 cup (165 g) packed light brown sugar
20 - 2 egg yolks, warmed to room temperature
21 - 1 tsp vanilla extract
22 - 1/3 cup (113 g) unsulphured molasses

# Instructions:

01 - Grab a small cookie sheet and cover it with parchment paper
02 - Grab a small bowl and throw in the cream cheese, sugar, and vanilla. Beat it with your mixer on medium-high until it's light and the sugar melts away, about 2 minutes
03 - Drop about 2 teaspoons of the cheese mix onto your lined sheet, making 18 little portions
04 - Put the sheet in the freezer until the cheese drops turn completely solid
05 - Mix your sugar with all the spices in a small bowl and set it off to the side
06 - Turn your oven to 350°F (175°C) and put parchment on two baking sheets
07 - In another bowl, stir together the flour, all your spices, baking soda, and salt
08 - Take your soft butter and brown sugar and beat them with your mixer on high till they're fluffy, about 2 minutes. Don't forget to scrape down the sides
09 - Drop in the egg yolks, molasses, and vanilla to your butter mix and beat on medium for a minute till it's all puffy
10 - Slowly add your dry ingredients to your wet stuff, mixing on low just until everything comes together
11 - Split the dough into 18 even chunks using a 2-tablespoon scoop, roll them into balls, then flatten them a bit
12 - Put a frozen cheese ball in the middle of each flattened dough piece, then fold the dough around it completely. Roll each stuffed dough ball in your spiced sugar mix
13 - Put your cookies on the baking sheets and bake just 6 at a time for about 11-12 minutes
14 - Leave the cookies on the hot pan for 10 minutes before moving them to a wire rack to finish cooling. Then dig in and enjoy
