Rice Krispie Date Bars (Print Version)

# Ingredients:

01 - 12 ounces (approximately 1 1/2 cups) whole Medjool dates, pitted
02 - 1 cup creamy peanut butter or almond butter
03 - 2 teaspoons vanilla extract
04 - 1/4 teaspoon fine salt
05 - 1/4 cup pure maple syrup
06 - 5 cups crisped rice cereal

# Instructions:

01 - Place the pitted dates in a bowl and cover them completely with water. Allow the dates to soak for 60 minutes until softened.
02 - Drain the soaking water and gently squeeze the excess moisture from the dates using your hands.
03 - Transfer the soaked, drained dates to a food processor. Add peanut butter, maple syrup, vanilla extract, and salt. Blend into a smooth, uniform paste, pausing to scrape down the bowl as needed.
04 - Spoon the date mixture into a microwave-safe bowl. Microwave on medium power for about 1 minute until the paste is softened but not runny.
05 - Add the crisped rice cereal to the warm date paste. Stir thoroughly to ensure the cereal is evenly coated.
06 - Press the mixture firmly into a 23 × 33 cm (9 × 13 inch) pan, spreading it evenly. Refrigerate for 30 to 60 minutes until set.
07 - Remove from the pan and slice into bars before serving.
