Trim away any wilted outer leaves from the cabbage. Using a sharp knife, slice the cabbage into 2 cm thick rounds, ensuring the core remains intact to hold the rounds together.

In a small bowl, combine olive oil, garlic powder, smoked paprika, onion powder, dried thyme, salt, and black pepper until well blended.

Arrange cabbage rounds on the prepared tray in a single layer. Evenly brush both sides with the seasoned oil mixture.

Roast in the centre of the oven for 25–30 minutes, turning once halfway through, until golden edges form and cabbage is tender.

Garnish with grated Parmesan, red pepper flakes, or chopped parsley if desired. Serve immediately for optimal texture.
