01 -
Turn your oven to 350°F (175°C). Get a 13x9-inch glass dish ready by coating it with butter spray or shortening.
02 -
Take one pie crust and flatten it on your counter into a 13x9-inch shape. Don't worry about small tears - just pinch them together.
03 -
Grab a big bowl and throw in the corn syrup, butter, vanilla, sugar, and eggs. Mix everything with a whisk until it's nice and smooth.
04 -
Toss the pecans into your mixture and stir them around so they're spread out evenly.
05 -
Put half your pecan mixture into the dish with the crust, making sure it's level.
06 -
Take your second crust and try to shape it as a top layer. Just put it over the mixture - it doesn't need to be perfect!.
07 -
Add the rest of your pecan mixture on top of the second crust and smooth it out gently.
08 -
Stick it in the oven for about 40-50 minutes. You'll know it's done when the filling feels a bit firm when touched.
09 -
Let your cobbler cool down to how warm you want it, then dish it up and dig in!.
