Nutty Caramel Cobbler (Print Version)

# Ingredients:

01 - 1 box Pillsbury® refrigerated pie crusts, warmed according to package instructions.
02 - 1/2 cup melted butter.
03 - 2 1/2 teaspoons pure vanilla.
04 - 1 cup granulated sugar.
05 - 2 1/2 cups dark Karo corn syrup.
06 - 6 eggs, lightly whisked.
07 - 2 cups roughly chopped pecans or 2 cups whole pecan halves.
08 - Non-stick butter spray.

# Instructions:

01 - Turn your oven to 350°F (175°C). Get a 13x9-inch glass dish ready by coating it with butter spray or shortening.
02 - Take one pie crust and flatten it on your counter into a 13x9-inch shape. Don't worry about small tears - just pinch them together.
03 - Grab a big bowl and throw in the corn syrup, butter, vanilla, sugar, and eggs. Mix everything with a whisk until it's nice and smooth.
04 - Toss the pecans into your mixture and stir them around so they're spread out evenly.
05 - Put half your pecan mixture into the dish with the crust, making sure it's level.
06 - Take your second crust and try to shape it as a top layer. Just put it over the mixture - it doesn't need to be perfect!.
07 - Add the rest of your pecan mixture on top of the second crust and smooth it out gently.
08 - Stick it in the oven for about 40-50 minutes. You'll know it's done when the filling feels a bit firm when touched.
09 - Let your cobbler cool down to how warm you want it, then dish it up and dig in!.

# Notes:

01 - This tasty treat combines the best parts of pecan pie with a flaky cobbler texture.
02 - Perfect for family get-togethers or as a fall sweet treat.
03 - Give it a few minutes to cool so you can really taste all the flavors.
