Gruyère Onion Burgers (Print Version)

# Ingredients:

01 - 2 big onions, cut into slices.
02 - 2 tablespoons unsalted butter.
03 - 1 tablespoon virgin olive oil.
04 - 1 teaspoon granulated sugar.
05 - 1/4 teaspoon regular salt.
06 - 1/4 cup beef stock.
07 - 1/4 cup dry white wine (skip if you want).
08 - 1 1/2 pounds ground chuck (80/20 mix).
09 - 1 teaspoon tangy Worcestershire sauce.
10 - 1 teaspoon cooking salt.
11 - 1/2 teaspoon cracked black pepper.
12 - 4 slices nutty Gruyère cheese.
13 - 4 soft brioche rolls.
14 - 2 tablespoons melted butter.
15 - Fresh thyme leaves (if you like).

# Instructions:

01 - Cook onions slowly for 20-25 minutes till they turn soft and golden brown.
02 - Pour in beef stock and white wine if using to scrape up tasty bits.
03 - Combine ground chuck with Worcestershire sauce, salt, and pepper. Shape into four even patties.
04 - Cook the patties about 4-5 minutes on each side.
05 - Top each patty with Gruyère and wait till it gets melty.
06 - Brush the rolls with melted butter and lightly toast them.
07 - Stack burgers with the sweet onions, sprinkle with thyme if wanted, and serve with extra broth on the side.

03 - Handle the meat gently for juicy burgers.
