Shepherds Pie (Print Version)

# Ingredients:

01 - A pinch of salt, with extra for seasoning.
02 - 3 big potatoes (roughly 1 1/2 to 2 pounds), skinned and cut into quarters.
03 - 8 tablespoons (1 stick) butter, split up.
04 - 1 regular onion, diced (around 1 1/2 cups).
05 - 1 to 2 cups assorted veggies, like chopped carrots, corn, or peas.
06 - 1 1/2 pounds ground beef.
07 - 1/2 cup beef stock.
08 - 1 teaspoon Worcestershire sauce.
09 - Black pepper and other favorite seasonings.

# Instructions:

01 - Drop the skinned and quartered potatoes into a medium pot. Add enough cold water to cover them by an inch. Throw in a pinch of salt. Let them come to a boil, then lower to a simmer until soft (around 20 minutes).
02 - Get your oven hot at 400°F.
03 - As your potatoes bubble away, melt 4 tablespoons butter in a big pan over medium heat. Toss in your diced onions and let them soften for about 6 to 10 minutes.
04 - Mix in carrots with the onions if you're using them since they need more time to get tender. You can toss in peas and corn a bit later as they cook faster.
05 - Throw the ground beef in with your onions and veggies. Cook until it's no longer red, then pour off any extra fat. Sprinkle with salt and pepper how you like it.
06 - Pour in the Worcestershire sauce and beef stock. Let it bubble up then turn down the heat. Cook without a lid for about 10 minutes, adding more stock if it starts looking dry.
07 - When potatoes are fork-tender, take them out and put them in a bowl with the other 4 tablespoons of butter. Mash them up smooth and add salt and pepper to your liking.
08 - Spread your meat mix flat in a big baking dish (a 9 x 13-inch pan works great). Cover it all with your mashed potatoes and run a fork across the top to make little ridges that'll brown nicely.
09 - Stick it in the oven until the potatoes turn golden and the filling starts bubbling, about 30 minutes. You can turn on the broiler for the last few minutes if you want it more brown on top. Just don't use glass dishes under the broiler as they might crack from the heat.

# Notes:

01 - Want it gluten-free? Just check that everything you use, especially the Worcestershire sauce, doesn't have gluten in it.
02 - Don't eat meat? You can swap the beef for a veggie alternative and it'll still taste great.
03 - Stick to metal or ceramic dishes when broiling to keep your glass dishes from breaking.
