Hot Chicken Noodle Broth (Print Version)

# Ingredients:

01 - 1/2 Tablespoon unsalted butter.
02 - 2 ribs celery, chopped small.
03 - 3-4 large carrots, cut into tiny cubes.
04 - 1 clove garlic, finely chopped.
05 - 10 cups chicken broth or stock.
06 - 1 teaspoon salt, adjust as needed.
07 - 1/2 teaspoon coarse black pepper, adjust as needed.
08 - 1/8 teaspoon dried rosemary, add more if you like.
09 - 1/8 teaspoon dried sage leaves.
10 - 1/8 teaspoon red pepper flakes.
11 - 1 batch handmade egg noodles or 4 cups dry egg noodles, bow-tie or any small pasta.
12 - 3 cups shredded rotisserie chicken.
13 - 1 teaspoon chicken flavor better than bouillon or chicken bouillon powder.

# Instructions:

01 - Warm the butter in a big enamel pot on medium-high heat. Toss in your chopped celery and carrots, then cook them for 3 minutes until they start to soften up a bit.
02 - Throw in your chopped garlic and stir it around for about half a minute until you can really smell it.
03 - Add your chicken broth and sprinkle in the rosemary, sage, red pepper flakes, salt, and pepper. Give it a quick taste and add a bit of better than bouillon if you want more chicken flavor.
04 - Let the broth bubble up to a boil. Drop in your noodles or pasta and cook until they're just firm to the bite. Watch store-bought noodles carefully so they don't turn mushy.
05 - Once noodles feel tender but not soggy, turn off the burner. The leftover heat will keep cooking them gently.
06 - Stir the shredded rotisserie chicken into your soup and give it one more taste. Tweak the seasonings if needed.
07 - Ladle it up while it's still steaming hot. The cozy taste of this homemade soup can't be beat. Any extras will stay good in a sealed container in your fridge for 4-5 days.

01 - Homemade stock makes this dish way tastier. You can make it by boiling the bones from your rotisserie chicken.
02 - If you can't eat gluten, just swap in gluten-free noodles or make your own with gluten-free flour mix.
03 - You can prep this soup ahead of time. For best results, make the broth first, then add fresh noodles and chicken right before you plan to eat.
