Preheat oven to 200°C. Line two baking sheets with parchment paper.

Roll out the thawed puff pastry sheets to slightly flatten. Using a 5 cm round cutter, cut circles from the dough.

Arrange pastry circles on prepared sheets. Press a thumb into the center of each to create a shallow well.

Spoon approximately 15 g goat cheese into the indentation of each pastry round.

Bake in the preheated oven for 8 to 10 minutes, or until pastry is golden brown.

Remove from oven. Drizzle each bite with about 2 ml honey and sprinkle with chopped fresh thyme. Serve warm.
