French Onion Potato Bake (Print Version)

# Ingredients:

→ Caramelized Onions

01 - 2 large yellow onions, thinly sliced
02 - 2 tablespoons unsalted butter
03 - 1 tablespoon olive oil
04 - 1 teaspoon salt
05 - 0.5 teaspoon ground black pepper
06 - 1 teaspoon sugar (optional)
07 - 0.5 teaspoon garlic powder
08 - 0.5 teaspoon dried thyme or 1 teaspoon fresh thyme
09 - 120 ml beef broth or vegetable broth

→ Potato Bake

10 - 4 large Yukon Gold potatoes, sliced 0.6 cm thick
11 - 1 tablespoon unsalted butter, for greasing
12 - 100 grams shredded Gruyère cheese (or Swiss, cheddar, or mozzarella)
13 - 50 grams grated Parmesan cheese
14 - 240 ml heavy cream or whole milk
15 - 0.5 teaspoon salt
16 - 0.25 teaspoon ground black pepper
17 - 1 teaspoon fresh thyme leaves

→ Garnishing

18 - Fresh thyme sprigs
19 - Additional Parmesan cheese
20 - Crispy fried onions (optional)

# Instructions:

01 - Heat butter and olive oil in a large skillet over medium-low heat. Add sliced onions, salt, black pepper, sugar, garlic powder, and thyme. Cook slowly, stirring occasionally, for 20 to 25 minutes until onions turn deep golden brown. Pour in broth, stir, and cook for 5 more minutes until onions are soft and jammy. Remove from heat and set aside.
02 - Preheat oven to 190°C. Grease a 23×33 cm baking dish with butter. Slice Yukon Gold potatoes into 0.6 cm rounds. Combine potato slices with heavy cream, salt, black pepper, and fresh thyme in a large bowl.
03 - Arrange half of the potato slices evenly in the prepared baking dish. Distribute half of the caramelized onions on top. Sprinkle with half of the Gruyère cheese and half of the Parmesan. Layer the remaining potatoes, onions, and cheeses. Pour any remaining cream over the top.
04 - Cover dish tightly with aluminium foil and bake for 40 minutes. Remove foil and continue baking for another 20 minutes, until cheese is golden and bubbling. For extra crispness, broil for 2 to 3 minutes at the end.
05 - Let the bake rest for 5 minutes after removing from oven. Garnish with fresh thyme sprigs, extra Parmesan cheese, and crispy fried onions if desired. Serve warm.
