Get your oven hot at 375°F (190°C) and put some parchment paper on a big cookie sheet.

Grab a big bowl and beat the cake mix with your soft butter and eggs until it's all smooth.

Drop in your mint or peppermint extract with some vanilla, then add enough green coloring to make it look nice. Mix slowly till the color's even.

In another small bowl, mix up the icing sugar and cornstarch together.

Scoop out about 1 1/2 tbsp of dough for each cookie, roll them in the sugar mix until they're covered, and lay them on your cookie sheet about an inch apart.

Pop them in the oven for 10-12 mins until you see the edges setting and tops aren't sticky anymore.

Take them out and while they're still warm, push a little red heart sprinkle right in the middle of each one.

Leave the cookies on the sheet for 5 mins, then move them to a wire rack to finish cooling.
