Festive Green Holiday Cookies (Print Version)

# Ingredients:

01 - 1 box white cake mix (15.25 oz or 432 g).
02 - 8 tbsp soft unsalted butter.
03 - 2 big eggs at room temp.
04 - 2 tsp mint or peppermint extract.
05 - ½ tsp vanilla extract.
06 - Green food coloring gel.
07 - ¼ cup icing sugar (32 g).
08 - 3 tbsp cornstarch.
09 - Red heart sprinkles or cinnamon candies.

# Instructions:

01 - Get your oven hot at 375°F (190°C) and put some parchment paper on a big cookie sheet.
02 - Grab a big bowl and beat the cake mix with your soft butter and eggs until it's all smooth.
03 - Drop in your mint or peppermint extract with some vanilla, then add enough green coloring to make it look nice. Mix slowly till the color's even.
04 - In another small bowl, mix up the icing sugar and cornstarch together.
05 - Scoop out about 1 1/2 tbsp of dough for each cookie, roll them in the sugar mix until they're covered, and lay them on your cookie sheet about an inch apart.
06 - Pop them in the oven for 10-12 mins until you see the edges setting and tops aren't sticky anymore.
07 - Take them out and while they're still warm, push a little red heart sprinkle right in the middle of each one.
08 - Leave the cookies on the sheet for 5 mins, then move them to a wire rack to finish cooling.

# Notes:

01 - Keep your treats in a sealed container at normal room temp for up to 4 days.
02 - For longer storage, cool them fully and stick them in a freezer bag for up to 2 months.
03 - Try using cinnamon hearts instead of sprinkles for a spicy kick.
