Set your oven to 350°F (175°C) and let it warm up.

Melt butter in a pan on medium heat. Cook the sliced onions slowly until they turn golden and sweet, about 20-25 minutes. Pour in a bit of beef stock to scrape up the brown bits, then stir until it’s soaked up. Let them cool off for later.

Mix ground beef, breadcrumbs, milk, garlic, egg, Worcestershire, mustard, thyme, salt, and pepper in a big bowl. Work everything together until it's all mixed up.

Blend in the golden onions and half of the cheese. Shape this mix into a loaf and settle it into your baking dish.

Put the dish into the warmed-up oven and bake for about 1 hour or until the inside hits 160°F (70°C).

Spread the leftover cheese over the cooked loaf. Pop it back in the oven for another 5-10 minutes, just until the cheese melts and shines.

Let the meatloaf chill out for 10 minutes once it's out of the oven. Slice it up and enjoy with whatever sides you like!
