Mexican Picadillo (Print Version)

# Ingredients:

01 - 1 tablespoon of olive oil.
02 - 3-4 small yellow potatoes (roughly 8 ounces), chopped.
03 - 1 medium-sized yellow onion, diced.
04 - 1 jalapeno, diced into small pieces.
05 - 1 serrano, diced (you can skip this if you'd like).
06 - 2 garlic cloves, minced.
07 - 1 pound of ground beef.
08 - Two large tomatoes, diced.
09 - 3/4 cup of beef broth.
10 - 1 tablespoon of paprika.
11 - 1 tablespoon of oregano (Mexican, if possible).
12 - 1 teaspoon of ground cumin.
13 - Salt and black pepper as needed.
14 - To serve: Warm tortillas or cooked rice, lime juice, chili flakes, extra peppers, and hot sauce.

# Instructions:

01 - Warm the oil in a big pan over medium. Toss in the potatoes, peppers, and onion, then give it all a good stir and let it cook for around 5 minutes till they get a little soft.
02 - Mix in the garlic and the ground beef. Break up the beef with a wooden spoon while you brown it for about 5 minutes. You don't have to cook the meat completely yet.
03 - Add the stock, chopped tomatoes, and seasonings. Then drop the heat to a gentle simmer and stir it up well.
04 - Let it bubble gently for 20 minutes so the potatoes soften completely and everything cooks nice and evenly.
05 - Spoon it over rice or scoop it into tortillas. Top it with fresh lime, chili flakes, and more peppers. Grab your favorite hot sauce to finish it off.

# Notes:

01 - Other ground meats like turkey, chicken, or pork work great too.
02 - The heat level is moderate but feel free to adjust it.
03 - Try adding extras like almonds, raisins, carrots, or olives for a twist.
