Preheat oven to 190°C and line a baking sheet with parchment paper or a silicone baking mat.

Place small heaps of shredded mozzarella onto the prepared baking sheet, allowing approximately 5 cm between each mound. Top each with a slice or a few pieces of diced pepperoni.

Bake for 7 to 10 minutes, until cheese is fully melted, bubbling, and edges are golden brown.

Remove baking sheet from oven and allow chips to cool for 5 minutes on the tray. Once crisp, transfer to a serving plate.
