Chicken Bread Rolls (Print Version)

# Ingredients:

01 - 1 beaten egg.
02 - 4 bread slices.
03 - 2 tablespoons of olive oil.
04 - Salt and pepper for seasoning.
05 - 1 tablespoon yellow mustard.
06 - 1/4 cup mayo.
07 - 1/4 tsp garlic powder.
08 - 1/4 cup finely diced bell peppers (use any color you like).
09 - 1/2 cup finely chopped onions.
10 - 1 cup diced cooked chicken.

# Instructions:

01 - Use a rolling pin to press the bread slices until they're really thin and soft. Set them aside afterward.
02 - In a big bowl, toss together the chicken, peppers, onion, mustard, mayo, garlic powder, salt, and pepper.
03 - Place a scoop of this mix right in the middle of each piece of flattened bread.
04 - Roll each one snugly over the filling. Use a toothpick to hold it together if it starts to unroll.
05 - In a large pan, heat up olive oil on medium-high heat.
06 - Coat every roll in the beaten egg before placing them in the pan.
07 - Cook each roll for about 1 to 2 minutes on both sides until they turn golden.
08 - After cooking, let them rest for a couple of minutes before you dig in.

# Notes:

01 - You can make the filling ahead and keep it in the fridge.
02 - Toothpicks might help hold the rolls tight as they cook.
03 - Baking is an option too, at 375°F for about 15-20 minutes.
04 - Swap mayo for some Greek yogurt if that's your thing.
05 - This is an awesome way to use leftover chicken.
