Cream Cheese Pull-Apart Bread (Print Version)

# Ingredients:

→ Dough

01 - 56 g unsalted butter
02 - 80 ml whole or 2% milk
03 - 60 ml water
04 - 25 g granulated sugar
05 - 7 g active dry or instant yeast
06 - 375 g all-purpose flour, plus extra for rolling
07 - 13 g everything bagel seasoning
08 - 5 g fine salt
09 - 2 large eggs, at room temperature

→ Filling

10 - 225 g cream cheese, softened
11 - 3 scallions, finely chopped
12 - 8 g everything bagel seasoning
13 - 110 g low-moisture mozzarella cheese, shredded

→ Assembly

14 - Additional flour, as needed for dusting
15 - 14 g unsalted butter, melted, for brushing
16 - 16 g everything bagel seasoning, for topping

# Instructions:

01 - Combine butter, milk, and water in a large microwave-safe measuring cup or saucepan. Heat for 30 seconds, stir, and heat for an additional 15 seconds until butter is fully melted.
02 - Pour the warmed mixture into the bowl of a stand mixer. Whisk in sugar, then sprinkle yeast over the surface. Allow it to rest until foamy, about 5 minutes.
03 - In a separate bowl, whisk together flour, everything bagel seasoning, and salt.
04 - Add dry mixture to the wet ingredients and mix with the dough hook on low speed until a shaggy dough begins to form. Add eggs, then knead until a smooth, sticky dough develops, adding extra flour by the tablespoon if needed.
05 - Oil a large bowl and transfer in the dough ball. Cover with a damp kitchen towel and let rise in a warm place for approximately 1 hour or until doubled in volume.
06 - While dough rises, combine cream cheese, scallions, and everything bagel seasoning in a bowl. Set aside.
07 - Generously butter a 23 x 13 cm loaf pan.
08 - Deflate the dough and transfer to a lightly floured surface. Roll into a rectangle, approximately 30 x 50 cm.
09 - Spread the cream cheese filling evenly over the surface. Sprinkle mozzarella cheese uniformly on top.
10 - Cut the filled dough lengthwise into five equal strips using a pizza cutter or sharp knife. Stack strips atop each other, then divide crosswise into six squares.
11 - Carefully place dough stacks upright in the prepared pan to resemble an accordion.
12 - Cover pan with a towel and let rise for 30 minutes. Preheat oven to 175°C.
13 - Remove towel, brush the top of the dough with melted butter, and evenly sprinkle remaining everything bagel seasoning.
14 - Bake for 40–45 minutes, checking after 35 minutes, until the top is golden brown and set.
15 - Allow bread to cool in the pan for 15 minutes, then invert to release. Transfer to a serving platter and serve warm.
