Preheat oven to 175°C and line a baking sheet with parchment paper.

In a large mixing bowl, whisk together cottage cheese and eggs until smooth and well combined.

Add almond flour, baking powder, salt, honey or maple syrup if using, and vanilla extract. Mix until the batter is homogeneous.

Gently fold in fresh blueberries, taking care to avoid crushing them.

Using a spoon or cookie scoop, place dollops of batter onto the prepared baking sheet, spacing them approximately 5 cm apart.

Bake in the preheated oven for 20–25 minutes, or until golden brown and set in the centre.

Allow to cool on the baking sheet for several minutes before transferring to a wire rack to cool completely.
