Cottage Cheese Blueberry Cloud (Print Version)

# Ingredients:

→ Batter

01 - 240 g cottage cheese
02 - 3 large eggs
03 - 30 g almond flour
04 - 0.25 teaspoon baking powder
05 - 0.25 teaspoon salt
06 - 80 g fresh blueberries
07 - 1 tablespoon honey or maple syrup (optional)
08 - 1 teaspoon vanilla extract

# Instructions:

01 - Preheat oven to 175°C and line a baking sheet with parchment paper.
02 - In a large mixing bowl, whisk together cottage cheese and eggs until smooth and well combined.
03 - Add almond flour, baking powder, salt, honey or maple syrup if using, and vanilla extract. Mix until the batter is homogeneous.
04 - Gently fold in fresh blueberries, taking care to avoid crushing them.
05 - Using a spoon or cookie scoop, place dollops of batter onto the prepared baking sheet, spacing them approximately 5 cm apart.
06 - Bake in the preheated oven for 20–25 minutes, or until golden brown and set in the centre.
07 - Allow to cool on the baking sheet for several minutes before transferring to a wire rack to cool completely.

# Notes:

01 - For a touch of sweetness, opt for honey or maple syrup. Cloud bread texture is best enjoyed fresh.
