Pineapple Coconut Snowballs (Print Version)

# Ingredients:

01 - 1/4 cup powdered sugar.
02 - 20 oz crushed pineapple, drained really well.
03 - 1/4 teaspoon vanilla extract.
04 - Extra coconut to coat.
05 - 2 cups shredded coconut, split in half.

# Instructions:

01 - Stir together the pineapple, sugar, vanilla, and 1 cup of the coconut until it’s all combined.
02 - Grab small scoops and shape them into little balls.
03 - Roll those balls around in the rest of the coconut until they’re fully covered.
04 - Set them on a lined tray and pop them in the fridge for an hour so they can set.
05 - Keep them cold until it’s time to enjoy.

# Notes:

01 - Make sure to drain the pineapple really well.
02 - Chilling helps them stay firm.
03 - Store in the fridge to keep fresh.
