Cinnamon Donut Bread Loaf (Print Version)

# Ingredients:

→ Bread

01 - 250 grams all-purpose flour
02 - 1.5 teaspoons baking powder
03 - 0.5 teaspoon baking soda
04 - 1 teaspoon ground cinnamon
05 - 0.5 teaspoon salt
06 - 150 grams granulated sugar
07 - 115 grams unsalted butter, melted
08 - 2 large eggs
09 - 1 teaspoon vanilla extract
10 - 180 millilitres buttermilk

→ Cinnamon-Sugar Topping

11 - 60 grams unsalted butter, melted
12 - 100 grams granulated sugar
13 - 1 teaspoon ground cinnamon

# Instructions:

01 - Preheat the oven to 175°C. Grease a 23 × 13 cm loaf pan thoroughly with butter or non-stick spray.
02 - In a large mixing bowl, whisk together flour, baking powder, baking soda, ground cinnamon, and salt until fully blended.
03 - In a separate bowl, whisk granulated sugar, melted butter, eggs, and vanilla extract until smooth. Stir in buttermilk until evenly incorporated.
04 - Gradually fold the dry mixture into the wet ingredients, mixing gently until just combined. Avoid overmixing to ensure a tender crumb.
05 - Pour batter evenly into the prepared loaf pan. Bake for 45–50 minutes, or until a toothpick inserted into the centre emerges clean.
06 - While the loaf is baking, combine granulated sugar and ground cinnamon in a small bowl. Melt the remaining butter in a separate bowl.
07 - Allow loaf to cool in the pan for 10 minutes. Remove from pan and brush the melted butter over the warm surface. Evenly sprinkle the cinnamon-sugar mixture over the top.
08 - Let the bread cool completely on a wire rack before slicing and serving.

01 - Do not overmix the batter; a few small lumps are preferable for a soft, donut-like texture.
