Chocolate Filled Bites (Print Version)

# Ingredients:

01 - For filling: 1 cup smooth peanut butter.
02 - 1 cup powdered sugar for sweetness.
03 - For cookie base: 1/2 cup unsalted butter, softened.
04 - 1 cup brown sugar, packed.
05 - 1/4 cup creamy peanut butter, extra smooth.
06 - 1 1/2 teaspoons vanilla for flavor.
07 - 1 large egg.
08 - 1 large egg yolk.
09 - 1 1/2 cups of all-purpose flour.
10 - 1/2 cup cocoa powder, unsweetened.
11 - 1/2 teaspoon salt, kosher or sea.
12 - 1/2 teaspoon baking soda to help rise.
13 - Granulated sugar to sprinkle on top.

# Instructions:

01 - Blend powdered sugar with peanut butter until smooth and soft.
02 - Roll into 1-inch rounds, then chill in the freezer for about half an hour.
03 - In a bowl, mix cocoa powder, salt, flour, and baking soda together with a whisk.
04 - Whip the butter for a few minutes, then add the brown sugar and continue mixing for 2-3 minutes.
05 - Beat in the peanut butter until smooth and fluffy.
06 - Stir in the vanilla, egg, and egg yolk until combined.
07 - Slowly add the dry mixture to the wet mixture while keeping the mixer on low speed.
08 - Flatten each dough portion and cover a frozen peanut butter ball with it completely.
09 - Set the cookies on parchment-lined sheets, then gently flatten them a bit.
10 - Put them in a 350°F oven for about 8 to 10 minutes.
11 - While still warm, sprinkle with some sugar to add a sweet touch.
