Chili Eggs Easy Mix (Print Version)

# Ingredients:

01 - 4 slices of bacon, center cut.
02 - 1 diced white onion.
03 - 1 finely chopped poblano or bell pepper.
04 - 2 minced garlic cloves or use a grater.
05 - 1 pound of raw turkey breakfast sausage.
06 - 1 packet of chili seasoning mix.
07 - A 28 oz can of crushed fire-roasted tomatoes.
08 - 3-4 cups of beef broth, adjust based on how thick you like it.

# Instructions:

01 - Lay out the bacon in a soup pot or Dutch oven over medium heat. Once it's nice and crispy, pull it out and drain on a paper towel.
02 - Toss the onion and pepper into the bacon grease. After 2-3 minutes, when they start softening, stir in the garlic. Let it cook briefly—just until the smell hits—and then add the turkey sausage.
03 - Crumble up the sausage and cook until there's no pink left.
04 - Dump in the rest of the ingredients. Slice or crumble the bacon, then toss it back into the pot. Crank the heat to a boil before lowering it to a gentle simmer. Cover it up and let it cook nice and slow for 45-60 minutes before digging in.

01 - Goes great with fried eggs, hash browns, or baked eggs on top.
02 - Add toppings like cheese, salsa, avocado, tortilla chips, or yogurt/sour cream if you'd like.
03 - Feel free to swap in cooked crumbled turkey sausage or ground chicken if you'd prefer.
