Cheesy Potato Bite Puffs (Print Version)

# Ingredients:

01 - 3 beaten eggs.
02 - 2 cups cold mashed potatoes.
03 - 1 cup Monterey Jack cheese (shredded), split.
04 - 1/4 cup fresh chives (finely chopped), extra for topping.
05 - Salt and pepper as needed.
06 - Sour cream for topping (if wanted).

# Instructions:

01 - Get your oven hot at 400°F (200°C). Grease a 24-cup mini muffin tin lightly so your tiny bites won't stick when they puff up.
02 - Grab a big bowl and mix your cold mashed potatoes with the eggs, then stir in 3/4 cup cheese and those chopped chives. Throw in some salt and pepper till it tastes good to you.
03 - Drop the potato mix into each cup of your muffin tin, filling them almost to the top so they'll set up nicely.
04 - Scatter that last 1/4 cup cheese on each potato cup to give them a tasty crisp top.
05 - Pop them in the oven for 15-20 minutes. They'll rise up and turn a nice golden color when they're ready.
06 - Let them sit for about 5 minutes after baking. Then run a butter knife or spatula around each one to pop them out.
07 - Give them to folks while they're still warm. Top with some fresh chives and a dollop of sour cream if you want. Each bite's got that awesome cheesy taste.
