Get your oven hot at 400°F (200°C). Grease a 24-cup mini muffin tin lightly so your tiny bites won't stick when they puff up.

Grab a big bowl and mix your cold mashed potatoes with the eggs, then stir in 3/4 cup cheese and those chopped chives. Throw in some salt and pepper till it tastes good to you.

Drop the potato mix into each cup of your muffin tin, filling them almost to the top so they'll set up nicely.

Scatter that last 1/4 cup cheese on each potato cup to give them a tasty crisp top.

Pop them in the oven for 15-20 minutes. They'll rise up and turn a nice golden color when they're ready.

Let them sit for about 5 minutes after baking. Then run a butter knife or spatula around each one to pop them out.

Give them to folks while they're still warm. Top with some fresh chives and a dollop of sour cream if you want. Each bite's got that awesome cheesy taste.
