Garlic Butter Steak Bites (Print Version)

# Ingredients:

01 - 1 pound sirloin steak, chopped into 1/2-inch chunks.
02 - 1/4 cup butter or ghee, split into two portions.
03 - 1 tablespoon of olive oil.
04 - 1/2 teaspoon dried oregano.
05 - 1/4 teaspoon black pepper, with extra for seasoning.
06 - 3 minced cloves of garlic.
07 - 1 teaspoon dried thyme.
08 - 1/2 teaspoon sea salt, plus extra if needed.
09 - 1 pound of Yukon gold potatoes, diced into 1/2-inch pieces.

# Instructions:

01 - Place your cast iron skillet over medium heat, then stir in the olive oil and half the ghee.
02 - Toss in potatoes, garlic, and seasoning mix. Stir every minute or so for 8-10 minutes until soft inside and golden outside.
03 - Remove the potatoes from the pan and set them to the side.
04 - Turn the heat to medium-high, drop the rest of the ghee into the pan, and add the steak pieces. Let them sit and sear for 2 minutes before stirring.
05 - Add the potatoes back in, mix everything, adjust the tastes with more seasoning, and enjoy.

# Notes:

01 - Cut your potatoes evenly so they cook the same.
02 - Avoid stirring the steak too soon—let it develop a crust.
03 - Use any type of small potatoes you like.
