Steak Bites in Creamy Sauce (Print Version)

# Ingredients:

01 - 2 lbs beef cuts - choose from filet, ribeye or sirloin.
02 - 4-5 tbsp avocado oil.
03 - 5 tbsp butter, split.
04 - 10 garlic cloves, chopped and split.
05 - 1.5 cups heavy cream.
06 - 2 green onions, cut up (use both colors).
07 - 1 tsp chili flakes.
08 - 2/3 cup parmesan cheese, any style.
09 - 4 lbs brown-skin potatoes.
10 - 1 cup warmed half and half.
11 - 6 tbsp melted salted butter.
12 - 3/4 cup shredded Monterey Jack (or swap with another melty cheese).
13 - 1 tsp garlic powder.
14 - 3/4 tsp salt.
15 - Pepper as you like it, roughly 1/2 tsp.
16 - 2 tbsp smoked paprika (regular works too).
17 - 1 tbsp cayenne pepper.
18 - 1 tbsp onion powder.
19 - 2 tsp garlic powder.
20 - 1 tsp ground black pepper.
21 - 1 tsp salt.
22 - 1/2 tsp dried thyme.
23 - 1/2 tsp dried oregano.

# Instructions:

01 - Chop steak into chunks about 2-3 inches big, coat with avocado oil and rub with blackened spice mix. Let it sit out for 10-15 mins to warm up while you work on the potatoes.
02 - Strip the skins off potatoes and cut into quarters, then soak them in cold water for 10 mins to get rid of extra starch. Empty water and boil them in salty water until soft enough for a fork.
03 - Heat up 2-3 tbsp avocado oil in a big pan on medium-high. Put in beef pieces with space between them and don't move them for about 2 minutes until they're brown. Turn over, cook 1 more minute, then turn heat down for another minute. Take them out and cover.
04 - Using that same pan, melt 3 tbsp butter and cook 1 tbsp chopped garlic until it smells good. Toss beef back in and make sure each chunk gets coated with garlicky butter. Cook one more minute then set aside under foil.
05 - Drop the rest of the butter and garlic in the pan, cook until you can smell it. Slowly add heavy cream while whisking, let it bubble and cook down for 3-5 minutes.
06 - Empty water from potatoes, then mash them up with the melted butter and warm half and half until they're smooth. Mix in Monterey Jack, garlic powder, salt and pepper till everything tastes good together.
07 - Mix chili flakes and green onions into your cream sauce, then add Parmesan, stirring until it gets nice and thick. Taste and add more seasoning if you want.
08 - Load up plates with beef chunks on top of cheesy mashed potatoes and pour lots of that Parmesan cream sauce over everything for an amazing meal.

# Notes:

01 - You can play around with different seasonings for both the beef chunks and potatoes depending on what you like.
02 - We suggest avocado oil because it won't burn when you're cooking at high heat, giving your meat a nice brown outside.
03 - Don't worry about the heat level - just add more or less chili flakes to make the sauce match how spicy you want it.
